Meet the Chef

Chef Nicholas has been with the Sawgrass Marriott and Spa since June of 2001, were he started as an intern. During his internship at the Cabana Club he built a strong foundation for a culinary career and was asked to join the team after graduating from Pennsylvania Culinary Institute of America. Over the next few years he took on more responsibilities and focused on the 619 Ocean View restaurant to become the Specialty Chef of the restaurant.


Chef Nicholas has played a strong roll with the development & evolution of the 619 Ocean View to become a fresh, vibrant, & exciting place to dine. The views of the Atlantic Ocean and North Florida’s seafood have inspired the fusion of Mediterranean cuisine with local fresh seafood & produce. Chef’s menus are constantly evolving with the seasons & availability of resources to keep the offerings in 619 new & exciting.
